A kitchen that writes everything down
Stewart & Musell began as a shared notebook between two cooks who could never remember what they changed the last time a dish worked. That notebook became a ledger, and the ledger became this.
We test recipes the slow way: cook it, measure it, cook it again, and only write it down when it works in a normal home kitchen with normal equipment. No mystery "season to taste" hand-waving where a real measurement belongs.
What we believe
A recipe is a promise. If we tell you a dish takes forty minutes and serves four, it should take forty minutes and serve four. Every page in our ledger carries the timings we actually hit, the difficulty we actually felt, and a shopping list that matches the method step for step.
How we work
Each recipe passes through at least three cooks before it is published. We argue about salt. We re-shoot the photo if the dish changed. When a technique is worth a longer explanation, it goes in the Journal so the recipe page stays short and usable at the stove.
The company
Stewart & Musell Kitchen is operated by THE STEWART/PERRY COMPANY, LLC, based at 4855 OVERTON RD., BIRMINGHAM, AL 35210, USA. You can reach the team any time at info@stewartandmusell.com or +1 (917) 998-0175.
Who is in the kitchen
A small team of cooks, writers and testers who obsess over the details so you do not have to.
Ray Stewart
Ray keeps the ledger honest. If a recipe cannot survive three cooks and a sceptical palate, it does not get a page. Twenty years in professional kitchens taught him that the boring details are where dinner is won.
Dana Musell
Dana turns tested recipes into words you can actually cook from. She is the reason our method steps are short, ordered and free of mystery. She believes a recipe is a promise you keep.
Priya Nair
Priya builds our spice-driven recipes from the ground up and has never met a curry she could not improve. She runs the developer notebooks and mentors every new cook who joins the bench.
Kenji Baker
Kenji answers the why. Why the pan needs to be that hot, why the dough needs that rest. He translates the science into rules of thumb the rest of us can remember at the stove.
Mara Oduya
Mara shoots every dish exactly as it comes off the pass, no glue, no tricks. If it looks good on the page, that is genuinely how it looked on the plate.
