Saffron Sweet Potato Flatbread with smoked paprika and garlic

Ingredients

3 mediumsweet potatoes
3 tbspolive oil
3 clovesgarlic
2 tspsea salt
1 tbspsherry vinegar

Method

Prep everything first: chop the aromatics, measure the smoked paprika and garlic elements, and pat the sweet potato dry so it colours well.

Warm the olive oil in a large pan over a medium heat and soften the onion and garlic until sweet and translucent, about 5 minutes.
