Street-style Cod Medley with lime and coriander

Ingredients

4 filletscod fillets
3 tbspolive oil
1 cupstock
1 large, choppedonion
a handfulcotija cheese

Method

Prep everything first: chop the aromatics, measure the lime and coriander elements, and pat the cod dry so it colours well.

Warm the olive oil in a large pan over a medium heat and soften the onion and garlic until sweet and translucent, about 5 minutes.
