A fragrant take on Sweet Potato Gratin, built on galangal and chilli and finished the way we like it. Ready in about 1 hr 27 min and easily enough for 6 people.

Prep everything first: chop the aromatics, measure the galangal and chilli elements, and pat the sweet potato dry so it colours well.
Warm the olive oil in a large pan over a medium heat and soften the onion and garlic until sweet and translucent, about 5 minutes.
Add the sweet potatoes and slow-cook until it takes on colour and the edges catch, 4 to 6 minutes.
Stir in the kaffir lime leaves and the rest of the galangal and chilli flavours, letting them cook out for a minute until fragrant.
Add the baby potatoes along with a splash of stock or water, then cover and cook gently until everything is tender and the sauce clings.
