A jar of crunchy, aromatic chilli oil turns leftovers into something you crave. It takes twenty minutes.

Make Your Own Chilli Oil

Once you have a jar of good chilli oil in the fridge, plain rice and noodles are never plain again.

The aromatics

Infuse the oil gently with garlic, ginger, star anise and a bay leaf before it meets the chilli.

The pour

Pour the hot oil over chilli flakes and a little salt and sugar, and listen to it sizzle.

Keep it in a clean jar and spoon it over everything for weeks.
