Umami is that deep, savoury moreishness that makes a dish feel complete. The good news is it is easy to add.
The umami pantry
Miso, soy, parmesan, tomato paste, dried mushrooms, anchovy. A little of any of these adds depth.
Stack, do not swap
Umami ingredients work best in combination. A little parmesan and a little tomato together beat a lot of either alone.
