Sweet and sour Chicken Breast Dip
A glossy take on Chicken Breast Dip, built on sweet and sour and finished the way we like it....
A five-spice take on Squash Salad, built on sesame and scallion and finished the way we like it. Ready in about 2 hr 20 min and easily enough for 4 people.
Free to cook
Prep everything first: chop the aromatics, measure the sesame and scallion elements, and pat the squash dry so it colours well.
Warm the olive oil in a large pan over a medium heat and soften the onion and garlic until sweet and translucent, about 5 minutes.
Add the butternut squash and smoke until it takes on colour and the edges catch, 4 to 6 minutes.
Stir in the light soy sauce and the rest of the sesame and scallion flavours, letting them cook out for a minute until fragrant.
Add the spinach along with a splash of stock or water, then cover and cook gently until everything is tender and the sauce clings.
Tested in the Stewart & Musell kitchen. Timings assume a standard home oven and hob.
